Big Fat Daddy’s would like to sponsor Hogging Up again, and has found what appears to be a good location for a future KCBS BBQ Festival & Competition closer to home base near York, Pennsylvania. This undisclosed location will power big rigs and have a covered building for the judges. We are currently discussing possibilities with the property owner who has ongoing construction and improvements to the site. It is unforseen when all these improvements will be completed and if we can book a date for 2016 but we are working on it. Things have been busy for Big Fat Daddy’s during 2015 doing the Factory Tour Stop for the County of York–the Convention and Visitor’s Bureau. These barbecue tours raise money for Bell Socialization Services, a local shelter in York Pennsylvania. So far we’ve had visitors from 12 different states who have enjoyed their visit. This came after we’d been inducted into the Southern Food and Beverage Museum and on top of that filmed on the second season of Food Network’s Carnival Eats show for our Colossal Got Beef? ® Crabcake.
This post was sponsored by Europe’s Best Beer?
Drink and eat responsibly 🙂
And guess what? It’s Not BBQ! It’s Crab Dip since Wayne is from Baltimore his famous crab dip recipe made the Carnival Eats show. Filmed in May, it’s airing now.

Hogging Up BBQ & Music Festival Returns to Virginia
Interactive BBQ Tour, Sample Tent , and Low Cost Kids Area Aims to Please
May 16, 2014
Clear Brook, VA – The Frederick County Fairgrounds again hosts the 2nd Annual Hogging Up BBQ & Music Festival June 27-29th 2014. The event features a Kansas City Barbeque Society cookoff and help three non-profits including the Winchester/Frederick/Clarke SPCA, Clear Brook Assembly of God’s Youth Mission and the Winchester Exchange Club. Big Fat Daddy’s Organizer Wayne Schafer promises this year’s festival will be bigger and better. Schafer says, “We’ve worked really hard on making changes that the public will like. Our BBQ event will be more interactive this year.”
Friday night promises a two stop barbecue tour. Schafer indicates, “The BBQ tour is where these Professional teams will be giving lectures giving away free tips and tricks that the home barbecue guru can use. This is really interesting as the public gets to interact and ask questions. They normally don’t do this kind of thing, and I’d like to thank the teams for supporting our cause.” Featured artist is country performing artist Michael Palmer.
Saturday’s most anticipated change is the People’s Choice Sample Tasting Tent, from 11am-2pm (or when samples run out.) Schafer says, “We worked hard with the health department and the teams to make this work. Teams will be cooking pork and numbered samples sold to the public who will judge and cast their numeric vote into the It Works Official Voting Booth”. The day’s events include performers Cosette Gobat, Burnt Orange Band and Rule-G in addition to a three stop barbecue tour including the return of TLC’s Pitmasters TV Show Season 2 Stars 3 Eyz BBQ . During the day dozens of professional BBQ teams will compete for fame, glory, some as far away as Ohio. Prizes will be given to the public throughout the day at the Vacation Village / Massanutten tent, and one lucky couple will win dinner with Professional Team Hog-It-Up BBQ on Saturday night.
Sunday’s events include a Backyard BBQ Contest for Adults (15 and up) and Kids (8-14) which Schafer says “It’s a great idea for family bonding time bring your meat and grill and come out!” Entry is $20 per adult team entry and $10 per child team, with adults present to light fire and oversee activities. Performing artists Brian Buchanan and Gary Smallwood will be taking the stage in addition to Evel Speed Motor Sick’l Shop of Inwood hosting a Bike & Car Show. Additionally, there is a Certified BBQ Judge class being taught by the KCBS on Sunday on the fairgrounds. All registration information can be found on the website.
All three days promise tasty food, merchandise vendors and a kids zone. Schafer says, “Most of the kids activities are run by the church and will be donation based. Home Depot will bring their free Kid’s Workshop out on Saturday.” Some cost based rides for kids include a mini train, and a fee for pictures inside the Blue Angels Phantom F4 cockpit (it was grounded last year) and an adult mechanical bull ride. Admission to the event is $5 on Friday (4pm-9pm), $8 on Saturday (10am-9:30pm) and only $1 Sunday (11am-5pm). Kids under 12 are always free. The SPCA encourages donates cans of cat food, dog food, and kitty litter at the gate as well. For the samples, tasting tickets may be purchased Friday or Saturday while supplies last at the gate. Hatfield, CF Sauer, Carlyle & Anderson, and Marriott Courtyard Winchester are some of the businesses helping the event survive in addition to being named a 2014 Good Sam Event destination. Schafer indicates they are no major money sponsors, and they are in need. Organizers are currently planning a Hogging Up West Virginia to be held in Great Cacapon, WV in October 2014.
About the Kansas City Barbeque Society
The KCBS is the largest non-profit group dedicated to the art and joy of hardwood smoking, and sanctions several hundred contests each year. KCBS is the most respected judging and sanctioning body in America because of its blind judging process that uses a weighted scoring index to ensure a level playing field for all competitors. Now you can now grill at home with Kingsford Charcoal, they even make competition briquettes!
There are only 7 competitors competing for fame and glory in our North Vs. South contest. There are five from Pennsylvania and two from Jersey, all listed here. Basically this is an organizer’s award for the best overall best score of the teams that aren’t in the immediate panhandle area (so if you are a MD/VA/WVA team you are in the Best of the Panhandle Contest.)
North vs South gives teams who came from further away a chance to win something and a nice little thank you for their efforts. In this case, it’s $50 cash and a gift basket that includes goodies from Big Fat Daddy’s . Just a little something something to say thanks for coming all this way!
Will a Jersey team take the cake representing the North? Or will the Pennsylvanians step up and reclaim the South? We know, calling Pennsylvania a southern state is kind of cheesy, but hey, we had to make it work. Good luck to all of you!
Coming from Lovettsville, VA we extend a huge HOGGGGING UP welcome to The Smoked Hog competition barbecue team! Head by Chef Jason Lage (read about him at MarketTableBistro),with team members Tara, Rebecca, Shawn and Sam who will be grilling it up at Hogging Up BBQ Festival and competing for fame, fortune and glory (and the Best of the Panhandle Award!)
Connect with them on the Facebook,
David Ortiz wth Peppers Galore, from Parkville, MD will be onsite selling his famous hot sauces, salsas, and bbq wing sauces. You can check them out here at Pepper Galore.
We are pleased to welcome the addition of Marriott Courtyard of Winchester, VA!
The Courtyard Marriott is minutes away from the festival! The special $79 rate includes their full hot buffet breakfast, with omelet station for 2 per room. They are conveniently located across from Candy Hill Campground, approximately 6 1/2 miles from the event. There is plenty of free parking for trucks, trailers and buses. Enjoy the pool or lounge after a day of BBQ or relax in the Courtyard. Use this special festival link for booking.
We would like to give a huge HOGGING UP thank you to Clemens Food Group, owner of Hatfield Quality Meats for Sponsoring our event. Clemens Food Group was originally founded in 1895. They have had a great reputation all these years as being a leader in the food industry starting with the industrial movement in America. Back in the late 1890’s John Clemens had a farm in Maryland, later the site for Pleasant Valley Packing. He would go into Philadelphia to sell his wares – where JM Funk was starting Hatfield’s Pork processing plant. Needless to say, the rest is pretty much a great part of history.
Clemens owns these popular brands:
Big Fat Daddy’s has been faithful to using Ferrante’ Brothers special blend of gourmet mild Italian rope sausage at fairs and festivals all these years.
We found it originally in Baltimore, with Nick Ferrante’s original recipe brought back from Italy. We are happy to report this brand is now owned by Hatfield–with the same great tasting recipe kept secret all these years.
Thank you for this wonderful partnership! Make sure to visit Hatfield Quality Meats for quality saving coupons and to read about new products!
Let’s give a big “HOGGING UP “ welcome to Jon Wayne Waldron who is coming with his right hand man “Sam Adams” (for real) from Louisa, Virginia! BBQ Unplugged will be fighting for his home state of Virginia & the Panhandle award in this competition!
Pitmaster: Jon Wayne Waldron Team Member: Sam Adams
Representing: Louisa, VA
We’d like to give a big “hogging up” welcome to one of our barbecue competitors, who is just a stone’s throw away from Winchester….yep–neighboring town of Bluemont! Who would have thought there’s professional bbq gurus right in your own backyard Winchester?
Pitmasters: Mike & Michelle Lackey
Representing: Bluemont, VA
The coordinators would also like to extend a personal THANK YOU for all the kind suggestions and guidance they have received from the Lackey’s–they have spoken on behalf of competition teams and want to make sure we have our bases covered (basically no sucky goodie bags and lots of electric!) So thanks to them for speaking up and making a difference. You won’t find any real estate pens in our bags this year. Thanks to the Lackey’s we are glad they are joining us this year!
Looking for a Campground to stay in Winchester when coming to the Hogging Up BBQ & Music Festival ? Visit Candy Hill Campground. They have a pool, cabins you can rent and a beautiful picturesque setting.
And yes, you will feel like you are in Candy Land! This is normal. Do not be alarmed.
Burnt Orange Band’s bio is now live on our website! Check out our bands page and read up on this Culpepper Virginia band as they will rock the house at the 2013 Hogging Up BBQ Festival.
Special thanks to Bill Flannery of Texas Brush who will be making some super cool Hogging Up Texas Brushes for our two top winners *Grand Champion and #Reserve Champion, and winner of the #Best of the Panhandle Award . We appreciate him donating them to our festival. This is in addition to any other prizes or trophies for these categories.
We love our Texas Brush, not only because it cleans your grill to a tee, but that it saves you money over using smaller grill brushes that get bent up and fall apart . Well, we used to have to replace our grill brushes every month and now we can just find satisfaction in walking so tall with such a big brush that doesn’t need replacing.
Here is our Texas Brush Review.
